San Nicasio Pimentón de la Vera dresses the potato in a warm reddish hue. On the nose, the unmistakable sweet smokiness of the paprika; on the palate, a clean crunch, a balanced potato base and a mild, slightly sweet and smoky seasoning — no heat — rounded off by pink Himalayan salt.
Like all San Nicasio varieties, they are made the traditional way: non-GMO Spanish "Agria" potatoes are peeled, cut, washed and slowly fried at low temperature (120–140 °C) in extra virgin olive oil P.D.O. Priego de Córdoba — the "liquid gold" from the centuries-old olive groves of the Sierras Subbéticas Natural Park.
