Rincón de la Subbética is an organic extra virgin olive oil made exclusively from Hojiblanca olives picked in the very first days of the harvest, at their peak. Born in the heart of the Sierras Subbéticas Natural Park (Córdoba, Andalusia) and protected by the PDO Priego de Córdoba — one of the world's most decorated designations of origin — it is ranked year after year among the finest organic olive oils on the planet.
Nose: very intense green fruitiness with remarkable complexity: freshly cut grass, citrus hints, thyme, mint and tomato vine. Palate: sweet on entry, with medium, perfectly balanced bitterness and pepperiness and a long finish.
Best raw, where it shows its full character: over good bread and toast, salads, gazpacho, grilled vegetables, fresh cheeses, red meat and oily fish. A final drizzle transforms any dish.
Olives are milled within one hour of arrival and the oil rests in inert-gas tanks until bottling, locking in aromas and polyphenols. Store away from light in a cool, dry place. Best before: 18 months from bottling (see label).

Almazaras de la Subbética is a Córdoba cooperative with over half a century of olive-growing heritage (its founding co-ops date back to 1954), named best olive mill in the world on several occasions. From the Sierras Subbéticas Natural Park in Carcabuey (Córdoba) it crafts some of the most awarded EVOOs in Spanish history.
